thank you, my recently absentee proprietor. i have done my very best to uphold the tradition of lori's chicken and waffles. i hope i have done well and proven myself as a capable employee.

by the way, do you know what a cheese enchilada is? is it like a bowl of chili? i can't seem to find a recipe or cookbook on it just yet.

oh my goodness, you asked for a margarita. coming right up, my boss.

Spicy South of the Border Breakfast Bake
Emeril Lagasse, March 2004

March 19— If you are looking for a hearty breakfast with a spicy Mexican kick, try Emeril's Spicy South of the Border Breakfast Bake. Or if you prefer something on the sweet side, try Cayenne-Candied Bacon or Giant Apple-Pecan Pancakes.


Breakfast Bake Ingredients

Note: Recipe must be refrigerated at least six hours before baking. Makes about 10 servings

• 6 Poblano chili peppers, about 1 1/2 pounds
• 1 teaspoon unsalted butter
• 1 1/2 pounds Mexican chorizo, or other hot sausage, removed from casings and crumbled
• 1 cup chopped yellow onions
• 1/2 cup chopped red bell peppers
• 1 tablespoon plus 1 teaspoon minced garlic
• 1 tablespoon plus teaspoon chili powder
• 5 teaspoons vegetable oil, or more as needed
• 5 flour tortillas
• 10 large eggs
• 3 cups half-and-half
• 1/2 teaspoon Emeril's Hot Red Pepper Sauce, or other hot sauce
• 1/2 teaspoon salt
• 1/2 teaspoon freshly ground black pepper
• 1/2 cup chopped green onions, green tops only
• 1/4 cup chopped fresh cilantro
• 1 1/2 cups grated pepper jack cheese
• 1 1/2 cups grated medium cheddar cheese
• Salsa, optional
• Sour Cream, for garnish


Breakfast Bake Directions

1. Preheat the oven to 350 F.
2. Roast the peppers by placing them on an open gas flame, turning them frequently with tongs until all sides are charred black, about 7 to 10 minutes. (Alternately, the peppers can be roasted under a broiler, or on top of a gas or charcoal grill.) Place the blackened peppers in bowl and cover with plastic wrap. Let rest until cool enough to handle, about 15 minutes. Peel the peppers, split in half lengthwise, and remove the seeds and the stems.
3. Grease a 9 x 13-inch baking dish with the 1 teaspoon of butter. Spread the chilis in a flat layer across the bottom of the dish.
4. In a large skillet, cook the sausage over medium-high heat, stirring to break up the meat, until browned. Add the onions and bell peppers, and cook, stirring, for 4 minutes. Add the garlic and chili powder, and cook, stirring, for 1 minute. Remove from the heat.
5. In a separate skillet, heat 1 teaspoon of the vegetable oil over medium-high heat. Add one tortilla and cook until softened, about 30 seconds per side. Remove from the pan and cut into quarters. Repeat with the remaining oil and tortillas.
6. Combine the eggs, half-and-half, hot sauce, salt, and black pepper in a large bowl. Whisk to combine. Combine the green onions, cilantro, and cheeses in a medium bowl, and mix well. Spoon 1/3 of the sausage mixture over the chilis in the dish, top with 1/3 of the tortilla quarters, and 1/3 of the cheese mixture. Repeat layering, ending with a cheese layer. Pour the egg mixture over the ingredients. Let rest, covered, in the refrigerator for at least 6 hours, or overnight.
7. Bake until bubbly and golden brown, and a knife inserted into the custard comes out clean, about 1 hour and 10 minutes. Remove from the oven and let rest 10 minutes before serving. Serve with salsa and sour cream, as desired.


Cayenne-Candied Bacon

•2 teaspoons vegetable oil
• 1 cup packed light brown sugar
• 3/4 teaspoon cayenne pepper
• 1 pound thinly sliced bacon


1. Preheat the oven to 350 F. Line a broiler pan with aluminum foil, and position broiler rack on top of pan. Lightly coat the rack with the vegetable oil. 2. Combine the brown sugar and cayenne in a shallow dish, and mix well. Press one side of each slice of bacon firmly into the spiced sugar to coat. Arrange the slices of bacon on top of the broiler rack in a single layer, sugared-side up. If there is any sugar remaining in the dish, sprinkle it evenly on top of the bacon.
3. Bake until the bacon is crisp and the sugar is bubbly, 15 to 20 minutes. Drain on paper towels and serve warm or at room temperature. (Can be made several hours in advance.)

Yield: Makes 1 pound

Giant Apple-Pecan Pancake

• 3 tablespoons unsalted butter
• 2 large apples, peeled, cored, and thinly sliced
• 1/3 cup firmly packed dark brown sugar
• 1/2 teaspoon ground cinnamon
• Pinch grated nutmeg
• 1/2 cup roughly chopped pecans
• 4 large eggs, beaten
• 1 cup whole milk
• 1 cup all purpose flour
• Powdered sugar, garnish
• Maple syrup, accompaniment


Preheat the oven to 400°F.

1. In a heavy, ovenproof 12-inch skillet, melt 2 tablespoons of the butter over medium-high heat. Add the apples, sugar, cinnamon and nutmeg, and cook, stirring, until the apples are soft and just golden, about 7 minutes. Add the pecans and cook, stirring, until the apples are caramelized, 2 to 3 minutes. Add the remaining tablespoon butter and stir to melt. Remove from the heat.
2. In a large bowl, combine the eggs, milk, and flour, and whisk just until blended, being careful not to overmix. Pour the batter over the apples. Bake until golden and puffed, 18 to 20 minutes.
3. Remove from the oven and sprinkle with powdered sugar. Drizzle with maple syrup and serve from the pan.


Yield: Makes 4 servings

Well this is no fun at all...

My sinuses are such a mess that I can't taste anything... I was taken out to a really nice lunch yesterday, and couldn't taste a single thing... and the peanut butter sandwich I just ate had no flavor either.... this is the pits...

OMG CJ -

I'm like this every March-April... I get hit back-to-back with the pine pollen and the orange blossom... whenever we have a really mild winter without a freeze, I can be certain that I'll have that "night of the living dead" look for about two months... Roll Eyes   :rolleyes:

I had had a few good years, so I was overdue to get hit hard again... my eyes are running and itching, and I'm just miserable. I manage to clear things up just enough to breathe a little bit before I drop off to sleep (after sneezing and honking all day) only to have the crap settle into my lungs during the night so I wake up in the morning sounding like I'm trying to hack up a hairball. There's just no winning, I swear...

I can so-o-o-o-o-o relate... I either pass out from sheer exhaustion, or the antihistimines finally do me in... it's incredibly exhausting too...

My eyes look like hell, so there's just one more reason to wear my "cool shades"... they hide a multitude of sins!

Somebody once told me "You look terrible... you should go home!" and I said "What? For two months? Hell, I can be just a miserable here as I can at home, and at least get paid to be miserable..." LOL!   :lol:

Hey CJ -

I've got the cure if your nose is all red and raw from blowing/sneezing, etc... and I've used this stuff for over 20 years, and it works like a charm...

Go to your local Merle Norman cosmetics store and get a jar of this stuff they have called "Super Lube" (I can hear you snickering already...) it has the consistency of a very thick, stiff petroleum jelly (extremely thick and stiff)... has a pleasant rose-scent to it.... you only need the tiniest smidge twice a day... takes the dryness, soreness, and redness out... as bad as I've been honking, at least my nose doesn't look real bad!

A jar of this stuff will last your darned near forever

Teng, I don't know about your coffee pot, I looked back and didn't find your thread about it, and I dunno who has a sore nose but I saw Lori's remedy. I have a cheaper one. I use Chapstick. Works overnight.
